Dawn's Pineapple Mimosa Salsa

Dawn's Pineapple Mimosa Salsa


  • 1 medium red onion diced
  • 2 cups of diced sweet cocktail tomatoes
  • 3 garlic cloves minced
  • 1 8oz can of pineapple chucks diced (reserve the juice)
  • 2 Tbsp of minced jalapeno peppers (you can use jar or fresh)
  • 2 limes juiced
  • 1 1/2 Tbsp of OLIVE OIL GROVE Champagne Mimosa Vinegar
  • 1/4 cup of chopped fresh cilantro
  • pinch of sea salt and black pepper


  1. In a medium bowl add the diced onion, tomatoes, garlic, pineapple, jalapeno, cilantro and give a good mix.

  2. Mix the pineapple juice, lime juice and Champagne Mimosa Vinegar and pour over salsa mixture and add salt and pepper.  Give a quick mix and serve with Red Quinoa Chia Organic Tortilla Chips.

*Bonus recipe utilizing the salsa for a Steak Marinade

This steak can be tossed in a salad, added to tacos with more salsa on top, or served with grill/roasted vegetables. 

  • 1/3 cup of Dawn's Pineapple Mimosa Salsa
  • 1 Tbsp of brown sugar

Mix the two ingredients together and marinate for 1 hour. Then simply grill or broil.
