
Hummus Chickpeas and Avocado
Hummus is the perfect Mediterranean appetizer consisting of grilled smashed chickpeas with fresh EVOO, here twisted with avocados and tomato powder. Enjoy with friends and family.
Ingredients
- 1 can of chickpeas (1 lb)
- 2 ripe avocados
- 1 garlic clove
- Lemon juice (1 lemon)
- Drizzle Early Harvest Extra Virgin Olive Oil
- Freshly ground pepper
Instructions
Peel and pit the avocados, cover lightly with lemon juice, put them in a blender bowl with the chickpeas (set about twenty aside) and their water, lemon juice, 2 tbsp. of early harvest extra virgin olive oil, garlic, salt and pepper.
Blend, adjust the seasoning if necessary. Set aside in a bowl in the fridge.
Meanwhile, grill the rest of the chickpeas in a baking dish for 30 min at 220°C or until they’re completely crisp.
Pour them over the hummus, and fully drizzle early harvest extra virgin olive oil.
