Crostini with Fresh Veggies
Crostini are an Italian appetizer consisting of small slices of grilled or toasted bread and toppings, sliced about 1/2 thick.
- 6 slices multi grain bread
- 1lb fresh mozzarella, sliced
- 2 spring onions
- 1/2 bunch basil
- 2 green bell peppers
- 2 tbsp oregano
- Drizzle Early Harvest Organic Extra Virgin Olive Oil and Champagne Mimosa Vinegar to taste.
- 1 tbsp ground pepper
Pre-heat the oven to 225 degrees. Slice the bread, sprinkle with oregano, salt, ground pepper and drizzle with olive oil. Let set about 1 hour in the oven.
Chop the onions, bell peppers, and mozzarella. Mix with washed and chopped basil leaves, salt, ground pepper and a little oregano.
Add chopped onion, bell peppers, and slices of mozzarella on each piece of bread. Place the crostini back in the oven for 5 minutes at 300 degrees.
Add a few basil leaves and a drizzle early harvest extra virgin olive oil and vinegar before serving.
